Cheesecakes are decadent dessert choices all on their own. But in 2003 at Planet Hollywood, a landmark dining destination in Downtown Disney, the chef combined the creamy concoction with bananas Foster for an over-the-top treat that received rave reviews from patrons. Foster sauce was developed at Brennan’s in New Orleans in the 1950s. It’s a velvety match of sliced bananas traditionally sauteed in butter, brown sugar, rum and liqueur. For the Planet Hollywood presentation from our recipe archive, the cheesecake slices are generously drenched in Foster sauce before serving.

PLANET HOLLYWOOD’S BANANAS FOSTER CHEESECAKE

Yield: 8 servings.

1 1/2 cups Nilla Vanilla cookie crumbs

1/2 cup clarified butter

Butter for greasing pan

Flour for dusting baking pan

Mint and powdered sugar

2 pounds cream cheese

2 eggs

1 teaspoon vanilla extract

8 ounces each: sugar, sour cream

Fosters sauce:

4 ounces each: butter, brown sugar

1/2 teaspoon cinnamon

2 ounces banana liqueur

Juice of 1 lemon

Juice of 1/2 of an orange

2 or 3 sliced bananas

1. Mix crumbs, clarified butter. Rub inside of springform pan with butter. Dust with flour. Tamp down mixture forming a short wall up side of pan. Bake at 300 F 5 minutes.

2. Beat cream cheese until smooth. With mixer running, add sugar. With mixer running, add eggs. Add vanilla, sour cream. Pour into cooled crust. Bake at 300 F for 40 minutes.

3. Cook brown sugar, butter until liquefied. Add juices, liqueur, spice. Boil. Reduce heat. Simmer 10 minutes; cool. Saute bananas in butter. Add sauce. Top cheesecake with mixture. Garnish with powdered sugar, mint.
